Why Anglers Love Mutton Snapper: How to Catch Bigger Fish in Deep Water

Muttons often get mentioned when you ask people to name their favorite snapper, and it’s easy to see why. They grow large, they’re great to eat, they fight hard, and they’re beautiful fish to boot. But although smaller muttons can be easy to catch in shallow water, especially in the Florida Keys, elsewhere in Florida, bigger fish are much more elusive. Where to Find Big Mutton Snapper

The larger individuals often hang out in water from roughly 90 to 250 feet deep, although they can certainly be found in different depths. Like most bottom fish, muttons like structure, whether it be natural rock bottom or wrecks. But unlike some other species, muttons often swim around the perimeter of a particular piece of structure rather than sitting right on top of it as other species can. This is important when targeting them.

Anchoring and Bait Presentation Tips

You can drift over structure, but many savvy mutton fishermen prefer to anchor, and when you do, try anchoring off to one side of the structure, preferably over sand or grass, and slightly up current. Muttons aren’t terribly picky about bait as long as it’s fresh and will eat live or dead offerings. Live pilchards, threadfin herring, sardines, ballyhoo and pinfish will do, as will freshly cut chunks of any of those baits. But the trick lies in how you present your baits.

Leader Length and Rigging Techniques

You want to use a lead weight big enough to keep your baits on the bottom off to the side of the structure, with a very long leader, as long as 50 feet. I would call 30 feet a minimum. Fluorocarbon leader is a solid bet in 30- or 40-pound-test, with a 3/0 to 5/0 circle hook (depending on brand) holding your bait. The idea is to keep the bait far from the weight, making it look as natural as possible in the current, as muttons have keen eyesight and can be wary. You can tie the weight in-line atop a swivel and handline the hooked fish in with the long leader at boatside or forgo the swivel and tie the leader straight to your fishing line. Then tie a dropper loop into the upper end of the leader and attach the weight to the loop with a snap swivel, which can be removed when a fish is on, creating a wind-on you can wind right to the tip.

Tackle Setup for Mutton Snapper Fishing

For tackle, I prefer a light conventional outfit spooled with 20- to 30-pound braided line. The no-stretch nature of the braid telegraphs every bite, and with that long leader, bites can be subtle. A slight motion of the rod tip may be all you see at first, but whatever happens, do not set the hook. Let the circle hook do its job, and when you’re convinced you have a bite, simply wind. If it’s a fish, you’ll come tight on a fat mutton on the other end.

Why Long Leaders Matter

This is just a modification of standard bottom fishing technique, but an important one. Long leaders will make the difference between catching big muttons consistently or not.
